To order a copy of PhotoStitch and receive some other useful applications as well, you can contact Canon Canada. This is a service for replacing disks (they might call it a replacement disk) that were damaged or lost, however, they did not require any proof of purchase or ownership of Canon products when I requested a copy of PhotoStitch. Just let them know you want a replacement disk to go along with a Canon Powershot camera and they will take your order and bill you for shipping.
Or if you feel uncomfortable about that you could just phone Canon and inquire about purchasing PhotoStitch™ (latest version). They will direct you to purchase a replacement CD for their digital camera line and put you in contact with the purchasing division.
